The onion should be sautéed for about 5 minutes, or until tender. As you mix, let the onion’s moisture dissolve the browned pieces from the pan.
  4. To toast the rice, add the uncooked rice to the skillet and continue to sauté for an additional one to two minutes.
  5. Stir the vegetable broth into the skillet for a moment to help it dissolve any leftover browned pieces on the bottom.
  6. Place the chicken back in the skillet on top of the rice. Turn the heat to medium-high, cover the skillet, and let the broth come to a full boil.
  7. After the rice and chicken have boiled, reduce the heat to low and allow the mixture simmer for 20 minutes without raising the cover or stirring. After 20 minutes, turn off the heat and let it sit for an additional 5 minutes without raising the lid.

  3. Add the baking soda and flour, and then fold the mixture with a spatula (Be careful not to overmix, which would cause the gluten in the flour to toughen resulting in cakier cookies).
  4. The dough should cool for at least 30 minutes after the chocolate pieces have been added. Refrigerate the dough for a whole night to give it a taste and colour more akin to toffee. The flavour of the dough will get more rich the longer it sits.

  2. Mayonnaise and flour should be combined to thicken liquids in a small bowl.
  3. A pan with 1 1/2 tbsp oil in it should be heated to medium high. Cook the chicken for 2 minutes on each side, or until browned. Transfer to a plate.
  4. heat to a medium setting. Garlic should be placed directly on the pool of residual oil in the centre of the skillet. Don’t let it burn; sauté for 20 seconds or until golden.

Fry until soft and transparent, about 3 minutes. Add the curry paste and simmer for one minute while constantly stirring.
  3. Stir in the chicken pieces to evenly coat them. Add the coconut milk, sugar, lime leaves, fish sauce, and lemongrass. Bring the mixture slowly to a boil, then lower the heat and simmer, covered, for 15 minutes to cook the chicken. While it cooks, stir the curry a few times to prevent sticking and to keep the chicken covered.
  4. Remove the coriander stalks’ leaves, pile them up, and coarsely chop them while the chicken is frying. Chicken Enchiladas

These chicken enchiladas are full with flavour. The chicken is roasted in a homemade enchilada sauce and topped with melted cheese. Learn more about this recipe.

Recipe Step By Step;

Ingredients:
  • Tortillas
  • Enchilada Sauce
  • Shredded Chicken:
  • Shredded Cheese
Direction:
  1. Set the oven to 350°F.
  2. In a large bowl, mix cooked, shredded chicken with 1/4 cup enchilada sauce. To taste, add salt and pepper to the food.
  3. The tortillas should be warmed and malleable after one minute of microwave heating, rotating them halfway through.
  4. Fill each tortilla equally with the chicken combination of shredded chicken and a good sprinkle of shredded cheese to assemble the enchiladas. Place them seam side down in a big baking dish after carefully rolling them up to seal.
  5. After applying the remaining enchilada sauce to the tortillas, sprinkle with the remaining cheese.
  6. The cheese must bake for 20 minutes to melt and bubble. Serve.
